Day 5 Detox Nutrition Plan

Welcome to THEJNSREPORT’S: Day 5 of My Detox Nutritition Plan

The start of Day 5 as routine saw me have my Psyllium Husk and a glass of water.

After about an hour later I had a muscle milk instead of a full on heavy breakfast as I might have had the urge to have.

Man! I didn’t realize that muscle milk was that huge!!!  LOL.  Lunch time rolled around and having just gotten my deli sandwiches in order to avoid cooking I prepared for the decision as to which would be eaten first.  I pondered momentarily when suddenly, wisdom prevailed and my mind was made up.  It would be Grilled Chicken Breast with melted American cheese and Mayo on Hero Bread.  Now I know this doesn’t sound as healthy as it could because of the cheese and Mayo, but then the sandwich would have been dry an lacked flavor.  I wasn’t going to put any other condiment on it.

Once I sunk my teeth into that sandwich I knew I had made the right decision plain and simple.

Later in the evening while watching a movie I opted for the second sandwich for the day.  Generally speaking it’s a good to go for me when I choose to eat cold cuts.

Listen here, that there Honey Turkeywas piled thick  with thickness yokum.  Then lettuce and american cheese, blanketed with a reasonable amount of mayonnaise!!! That was the perfect blend of flavors and textures.  For any stringent food Nazi”s out there eat… boiled shoe!!! 😀

Upon completion of this sandwich, I was done eating for the day and had water the rest of the night.

Welcome to THEJNSREPORT’S: Day 4 of Detox Nutrition Plan Continued

After assembling my salad I dug in.

Hawhat!!!?  If ya smellllllllllllll what the Chef!!!!……Is Cookin’!!!

Taste I have to admit is absolutely phenomenal.  I was told that the consistency being so soft in the middle was because I over processed the chick peas.  Either way I love how they came out.

Salad was enjoyed with the fat free dressing as you can see and I was satisfied until dinner time. Honestly, there is nothing quite like the taste of a fresh healthy salad.  Dinner time I was very much looking forward to as it just so happened that it was my Mom’s birthday dinner celebration I’d be looking forward to later.  With all that being said and without further ado I give you dinner with the family at Freda’s Caribbean and Soul Cuisine.

We arrived at Freda’s mid evening and had a brief wait before being seated as it was filled to it’s capacity.  My first impression when I saw Freda’s was wow it’s pretty cozy in there.  Not a big place but definitely busy.  If I had to guess I’d say it’s size was comparable to that of Melba’s located off 114th and Frederick Douglas Blvd. Freda’s located at 993 W109th St. and Columbus Ave sits on a very nice corner in the neighborhood right next to Central Park and is easily accessible via subways that stop at 110th St. such as the C, and 2 trains although the closest is the C train by far.  We drove to the restaurant and found parking relatively quickly nearby.

First thing I have to say about this place is it met all the expectations I had for it after reading some reviews of it when my brother suggested that we take our mother there for dinner.  While the wait for the food took a little bit, it was well worth the wait in price, size, taste, and presentation.  There were six of us and we managed to get seated right in front of the window for a great view of the passersby, many of whom stopped to take a peak inside much as I had while looking to see how busy they were when we initially arrived.  Funny how things look when you get to see them from both perspectives.  At any rate here is their menu below.

Everything on their menu is more than reasonably priced when you see what’s to come.

We realized that Freda’s is a B.Y.O.B establishment so I quickly went across the street to Manhattan Valley Wines and Spirits and picked up 2 bottles of Lambrusco.  Yassum!!!!  I encountered Lambrusco for the first time several years ago while vacationing in Spain.  It has always been a sparkling wine I’ve looked for here in the states when out shopping for good inexpensive wines.  Freda’s doesn’t have wine glasses or any glassware really.  All drinks are either bottle or served in plastic cups.  We appreciated the smaller cups they gave us separate for the wine.  Again, for the size and price being paid this was a minor detail for me that pretty much we all accepted and overlooked.  Next we looked over our menu’s and started to think about what each of us would order.

When were ready our server a very pleasant young lady took our orders and explained to us that they were out of Oxtail and Callaloo.  I’d had Oxtail twice and didn’t really care for it so that was no problem for me that they were out.  The Callalloo I actually would have ordered had they had it but it was no biggie.  My father, began the ordering, followed by my mother and subsequently my siblings and myself.  So you will be getting six reviews of Freda’s for the price of none.  😉

Dad went with Curry Goat, Collard Greens and Fried Plantain which came with Rice and Peas.  Mom went with Jerk Shrimp with Candied Yams and String Beans over Rice and Peas.  My sisters went with the following: Veggie Plate with Candied Yams, Cabbage, Curried Chick peas and Rice and Peas.  Curry Chicken with Cabbage And Fried Plantain over Rice and Peas and Mac N Cheese.  My brother went with the Jerk Chicken and Collard Greens, Mac N Cheese, Over Rice and Peas.  And lastly, I went with Brown Stew Chicken with Curry Potatoes and Chick Peas over Rice and Peas and two I say two orders of Mac N Cheese as Foghorn Leghorn would say.  LOL! Yes…uh!!

While we waited for our orders the Host and Proprietor of the establishment a lovely woman by the name of Eleanor (she mentioned to us she’s of Trinidadian descent) came to our table and began to converse with us about the history of the neighborhood and how she came to open Freda’s which is named after her Mother.  I hope you get to travel and be a person of leisure as much as you’d like Ms. Eleanor.  Her coming over just to talk to my family and I was awesome and really just made us all feel very much at home and welcomed.

I wish they could handle a much larger volume because their food is excellent in my opinion and so reasonably priced when you combine that with the personal attention and warmth of the owner’s establishment it was truly an experience we’ll all never forget.  Now without further ado Ladies and Gentleman you’re about to witness the magnificence of Caribbean Soul Food at Freda’s.

Several things stood out about this meal when i saw it arrive at the table making me want to have this next time I visit Freda’s.  The first thing was the clean presentation and abundance of the meal.  The second thing was the attention to detail.  The shrimps were thoroughly de-veined, and cooked to perfection.  The Candied yams I had to sadly pass on due to my choice for a second helping of Mac N Cheese.  And Thirdly, Value for my money.  Six entrees and some beverages came to just over $80 a very reasonable price for such excellent clean food and portion size.  Sister's Plate

The Curry Chicken, Cabbage, and Fried Plantain over Rice and Peas my younger sister ordered.

Lastly, my Brown Stew Chicken with Curry Potatoes N Chick Peas, and Mac N Cheese over Rice and Peas.  Say that three times fast.

Add a Lil Scotch Bonnet

We were given two cups of Scotch Bonnet pepper that had been freshly processed.  I poured it on without hesitation because why not?  I like Spicy!

Ahhh The Mac N Cheese what a glorious sight! I decided it too deserved a little something extra and so it got a dollop of the Scotch Bonnet as well.

Another glass of Lambrusco was in order to help wash down the fire added to my meal but it was a delicious flavored heat and definitely one of my favorite hot peppers to eat.

I will spare showing the plates of my siblings and show the completion of my plate which was savored from beginning to end.  I’m gonna have to try my hand at making the Brown Stew Chicken some time or perhaps the Jerk Chicken.  

Midway through my meal I began pondering whether I should order a plate to go for tomorrow but I thought better of it and didn’t.

With my meal completed and( unintentionally) my tool balanced on my plate signaling triumph my attention was turned to my other Mac N Cheese.  It too was not to be seen again.

Satiated with all that I’d consumed for dinner I had no room or desire for desert of any kind.  The same was true for pretty much everyone at the table. We got the check and headed out. The tip left was well deserved for the fantastic meal and time we had while there.  I know almost everyone left saying definitely we’ll be back!!

Day 4 of Detox Nutrition Plan

Welcome to THEJNSREPORT’S: Day 4 of Detox Nutrition Plan

To start day 4 I decided to have some fruit as well as… you guessed it two Psyllium Husk capsules.

I had a tangerine, a baby apple, and honey turkey with extra sharp cheddar cheese and Mayo on Ciabatta rolls.

The baby apple was so sweet.  I really could eat one every day. Tangerines are OK but not my favorite.  I actually prefer oranges.

The sandwiches were perfect in their balance with the mayo to help the dryness of the ciabatta rolls.  This by far is one of my favorite cold cut sandwiches, though sometimes I’ll substitute mustard for the mayo.  Next time I’ll try this with some aged Gouda and see how that works out.  Anyway these twins didn’t stick around for further questioning.  And like that they were gone.  Several hours passed before it was time for lunch.

Lunch time of course called for a return to eating my greens and so I once again turned to spinach as the base of my Salad.  Next I began to add the colors.  What you see here is chopped mushrooms, grape tomatoes, shredded carrot and spinach.  As a dressing I went with a fat free Italian.  Is there really such a thing?

I tossed the salad LOL!  I took a look and saw that like some sort of green maelstrom the mushrooms and tomatoes as well as some of the carrots were swallowed up and hidden.  Still I felt the salad needed something else added to it and so…I went to the fridge and pulled out falafel mixture I had left over and began frying up some falafels.  😀

I finished the falafel balls on their sides and carefully removed them from the oil.  I decided to add several of these dark honey golden colored “deliciosities” to my salad.

Day 3 of Detox and Nutrition Plan

Welcome to THEJNSREPORT’S: Day 3 of Detox and Nutrition

I woke up late Day 3 and so while I know I shouldn’t have I skipped breakfast I went with out eating till late afternoon.   In the course of that time I again took my Psyllium husk capsules and drank plenty of water.

Later in the afternoon while out and about in the city I figured I’d have sushi.  Unfortunately, I didn’t bring the camera to memorialize the meal but trust you me the Tuna sushi rolls I had were good.  I also found out again about the horrible suffering to be had when over indulging in too much Wasabi in one bite.  Believe you me I paid for it.  A sharp burning pain seared through my nostrils up to my brain leaving me teary eyed and gagging momentarily. I finished my sushi and went about my day running my errands before taking a minute to grab an Isopure protein punch to hold me over till I got home.

Back at home later in the evening I didn’t feel like a lot of fuss for dinner and while for a moment the idea to order out popped into my head I refrained and make a little Falafel ball and cheese sandwich utilizing a few left over falafel balls and of course that delicious Ciabatta bread.

Still realizing that the sandwich alone wouldn’t be completely satisfying I grabbed a bowl and poured in some peanuts, cashews and of course corn tortilla chips.

I washed everything down with filtered water and called it a night.  Stay tuned for Day 4 of my Detox and Nutrition week.

Day 2 Continued…

Welcome to THEJNSREPORT’S: DAY 2 Continued…

After frying up half of the mixture I decided to call it quits on falafel making for the day and I turned my attention to pasta and sauce.

After my water began to boil in went the whole wheat pasta.  Generally speaking, for my tastes I use a little sea salt and extra virgin olive oil in the water I boil my pastas in.  There was no exception here.

See that the pasta gave in to the hot bath and under they went.  I let them find out about the heat and olive oil for about 7 more minutes until they were pretty much al dente.  They were strained and placed in a bowl to hold them while I washed out the pot to prepare it for the sauce.

Once cleaned in went one jar of “Traditional Marinara Sauce” with some cayenne pepper, and several shakes of red chili flakes.

Keeping in mind that I didn’t want to have any meat in my pasta as I normally would, I let the sauce heat up before adding the pasta to it.

This had to be put in a bowl and devoured as my metabolism was in high gear by this point.  I gazed at the chunks of tomato in the pasta and yearned for ground turkey meatballs.  😦  Once I grabbed a bowl and let the pasta stay on a low flame for a few moments longer I began to dish up.  Pasta topped w Falafel

I topped my pasta with a piece of my fried falafel and concluded matters.  This meal was so good I’ll definitely have to have this listed as a great vegan alternative to my usual “5 Alarm Five Star Pasta and Meatballs.  Well that concluded Day 2.  Stay tuned for Day 3 of My Detox and Nutrition week.

Day 2 of Detox

Welcome to THEJNSREPORT’S: Day 2 of my Detox Nutrition Plan

Day 2 of my Detox Nutrition Plan proved to be a little more difficult in that I already began craving something fried.  I of course started my day with 2 capsules of Psyllium Husk for my colon detox.  You must drink at least a glass of water when taking these as they can cause choking if not enough water is drunken with them as per the instructions on the bottle.  For those who don’t know what Psyllium husk is, it’s a bulk fiber and expands when wet so it’s really good at cleaning you out as it works its way through your digestive track.

I woke up late morning and didn’t feel much like eating anything heavy so first I tried snacking on my cashews, and peanuts along with organic stone ground corn tortilla chips and a couple slices of extra sharp cheddar.  Both the cashews and peanuts were unsalted, as were the corn tortilla chips.  That held me over for about an hour before I felt hungry again and so I turned to some left over black bean soup in the fridge.

Oh if only you could taste how good and comforting this soup was.  Yessum!

Once that was over with I embarked on preparing myself something I’ve never made before but love to have anytime especially when I want to eat more veggies than meat.  Falafels.  It may sound strange but for years I never knew that falafels were made out of ground chick peas aka Garbanzo beans.  I went to the cupboard and pulled out 4 cans of Chick Peas and then assembled my ingredients and spices.  

With everything in place I began by processing the canned chick peas with the spices and half a white onion as I didn’t have any yellow ones.  I had to do this in two batches as all of the chick peas would not fit in the food processor at one time. Red Chili Pepper, Cayenne Pepper, Habanero Pepper, Chili, Powder, Coriander, Turmeric, Cumin, Onion powder, a little Oregano and lemon juice along with a little Kosher sea salt were required to spice the processed falafel mixture.

Using roughly 1 tspoon of each of the spices above with the exception of the peppers those I added a little more than a tspoon as I wanted my falafel balls to have some heat to em, I processed the chick peas until they looked like below.  The Process

I got a skillet ready with Canola oil and put the heat to it so that frying could commence post haste.

I grabbed a spoon and ice cream scooper to help me form the balls of falafel mixture.  However, I realized that using my hands was easier and gave me a bit more control over the shaping of the balls and so after a few attempts with the scoop and spoon hand formed balls were added to the skillet.  

While the above started out looking promising they weren’t coming together as I’d hoped and the frying I felt was taking a bit too long for them to brown.  I couldn’t understand why they weren’t crisping up and then I realized my error.   I hadn’t added any flour to the mixture to help make it drier and better for frying.   I ended up just folding the above failed falafel balls into a sort of fried mash and plated it resolved to start over making a new set of falafel balls.  Here’s what they turned into.

The taste was spot on in my opinion and the kick of the pepper was just right.

Undaunted by early failure I refocused and returned my attention to the skillet.

I put these on paper towel in a bowl shortly after seeing them turn this awesome color.

These tasted pretty good considering it was my first time making them.  Stay tuned for part 2 the conclusion of my meal prep for the day with organic whole wheat spaghetti, and tomato sauce.

Detox Nutrition Plan

Welcome to THEJNSREPORT’S: My Trader Joe’s Powered Detox Nutrition Plan (Day 1)

Day 1 detox began with flushing my system with water while taking 2 Psyllium husk capsules and fasting till evening.

I had decided from last week that today would be the day that I embarked on reversing some of the less healthy eating choices I’ve made over the past year and so feeling inspired I got myself up and headed to Trader Joe’s to buy all of the healthier choice foods for the beginning stages of my detox plan and return to preparing more healthy meal choices at home.

I first stopped at the w 72nd and Broadway location only to find that there was a line to get inside extending out to the corner of the block past Bank of America.  I was a bit flabbergasted to say the least because it was early afternoon on a Monday.

I actually managed to remain patient enough on the line outside the store waiting to be let in like the many times at Night spots where no one is inside but they want to make people wait to act like it’s busy inside.  In this instance there was no false pretense.  The store was so packed I took one look at the top of the staircase and about faced and headed downtown to a less busy location.

I arrived at the next location off W 21st and 6th ave and found it busy but at least there was no waiting line to get into the store.  I pulled out my list of essentials and headed first for the fruits and veggies.  I spent a few minutes grabbing all the items necessary for the salad I was to prepare to have for dinner tonight.    After getting 90% of what I came for and no time to waste I was on my way back home.

I made my tossed my baby spinach based salad in a large bowl and tossed it together with blue cheese, aged gouda, extra sharp cheddar, mushrooms, grape tomatoes, peanuts, roasted cashews, and fat free croutons.  I dressed my salad with a copious amount of extra virgin olive oil and red wine vinegar.  I cut a piece of Ciabatta bread and put a few slices of aged Gouda inside.  Ladies and Gentlemen, I give you… “the Salad”.

This is the beginning of getting on the right track. Pairing Salad with Ciabatta was a good idea!

I began using my tool to wage war against the salad.  Satisfaction would be mine.

I worked my way through this masterpiece of colorful healthy eating.  I enjoyed the contrast in textures with the addition of nuts and several different cheeses.  This was one of the more interesting and satisfying salads I’ve had for dinner in a long time.
